This recipe idea was submitted by our awesome graphic designer, Sarah.  And she is really upping our recipe game!  So what is a niçoise, anyway?  The word “niçoise” simply means something that originates from the city of Nice, in southern France.  A traditional niçoise salad has tomatoes, olives, boiled eggs, tuna or anchovies and is dressed with olive oil.  I have also seen cold boiled potatoes and green beans added.

For this niçoise, Sarah baked halibut, and roasted potatoes and artichoke hearts, seasoning each with Greek Girls All Purpose Greek Seasoning.  She added green beans sautéed with halved cherry tomatoes and olives.
