Method
- Preheat oven to 350℉.
- Scrub potatoes, rinse and pat dry. Cut each potato in half lengthwise, then into 1 inch wedges.
- In a large bowl, toss the potatoes, olive oil, Greek seasoning and salt (optional).
- Spread potatoes (and all the olive oil and seasoning) onto a large baking sheet. Spread evenly across the pan.
- Roast until potatoes are tender inside and slightly crisp on the edges, about 1 hour. Toss halfway through roasting.
- Serve warm. Garnish with lemon wedges and fresh parsley.
